Making Dinner Easier

August 22, 2010

Now that school is back in session, I’m looking for ways to make dinner time smoother.  My kids both play competitive soccer so they’re often at practices on week nights.  If I don’t plan ahead,  I’m sunk when it comes to dinner time.  One of the things that I do to make dinners go together easier is precook ground beef.

Brown a ton of ground beefI bought a huge 6 pound package of ground beef at Costco.   Then I cooked it up.

Many pans of ground beefOnly, I seriously need a larger skillet, because my stove looks like this.

Packaged, cooked ground beef After cooking thoroughly, I drain off the fat, let it cool and divide it into one pound containers to freeze.

I love having these frozen, precooked packets on hand.  It makes it a snap to throw together chili, spaghetti sauce, tacos or stuffed peppers.

Do you do anything special to help manage weeknight dinners?

  1. I LOVE that idea. I usually make a few meals on Sunday afternoon and stick them in the fridge for easy warm up during the week. I am going to have to get a giant package of ground beef and following your lead.

  3. We've been buying our hamburger in bulk, cooking and freezing too.....with one change. I'm too impatient to stand and fry up all that hamburger so I put it in a crock pot and let it cook until done. :-)

  4. I just started doing that 2 weeks ago! It's really nice for someone like me that forgets to thaw out meat for dinner.

  5. You put it in the crock pot until it's done!?!?!?! Oh, girl...you just officially changed my life...heehee! These are some awesome ideas! I LOVE MY CROCK pot...I even did a blog post about it...haha. Thanks for the great tips. So far, my crock pot has been my only no-fail time saver, but I love this idea and the idea about cooking on Sundays. How Great! ~Holly

  8. Great idea! I get the chicken at Costco (the frozen one). I defrost it, and barbecue them with different marinades (2 chicken breast feeds everyone in my family). I undercook all except 2, which we eat the night I cook. The rest, I freeze, and defrost. To heat up, I microwave.

  10. I add chopped onions and a little garlic to mine. I use it for spaghetti, hamburger helper, shepherd's pie, cheeseburger casserole, and tacos. I haven't tried the crockpot...great suggestion.

  11. I had done that at one point and it did make things much easier. I should start doing that again. I make a menu and then go food shopping this way there is no guessing what I'll make for dinner. :)

  12. Hi Carolyn. That's a great idea. I always buy several lbs and separate them into lb packages. I hate doing that much less having to brown the hamburger each time. This is one of those things where I want to thump my head and say "I'm smart, why didn't I think of that?" Thanks for sharing. That's exactly what I'll do next time.

And thanks for inviting me to link up with you. I'm heading there now.

    Hugs...Tracy :)

  14. I use my Seal-a-Meal to help! I don't pre-brown the beef (just in case I want to make meatballs or meatloaf) but I do vacuum pack it by the pound and keep it in the freezer. I often make lots of meatballs and freeze them for an easy dinner. - www.delightfulcountrycookin.com
